Absolutely Spectacular Sweet Breakfast Couscous - couscous with dried fruit and sweet vegetables tossed in a sweet honey and apple cider vinegar dressing for the perfect filling breakfast. Vegetarian.

Baked Chicken Parmesan - the classic breaded chicken breast topped with melted cheese and tomato sauce. Italian-style comfort food.

Balsamic Risotto - kale, shredded carrots and onions team up with chicken (optional), lemon juice and balsamic vinegar for a different take on this creamy classic. Easily adaptable to be vegetarian or vegan.

Broccoli Pesto - a mildly flavored pesto sauce made from broccoli stems and spinach with a touch of balsamic vinegar. Vegan.

Chicken Fried Chicken - the ultimate midwestern comfort food: crispy breaded chicken breasts deep fried to a golden brown. An every-once-in-a-while treat!

Chickpea Salad - a vegetarian alternative to tuna salad or chicken salad with red pepper, carrots and celery. Great for sandwiches, crackers or snacking. Easily made vegan by using vegan mayonnaise.

Citrus Fish with Subtle Garlic-Lime Vegetables - a quick meal of baked white fish and sauteed vegetables.

Citrus Lentil Soup with Collard Greens - a delicious citrus-y broth full of hearty potatoes, lentils and collard greens make a filling and nutritious soup. Vegan.

Cream of Mushroom Soup in Bread Bowls - delicious, creamy mushroom soup served in a hot, crisp baked bread bowl. Ultimate comfort food! Vegetarian.

Cruciferous Rice and Quinoa - brown rice and red quinoa with cruciferous vegetables (kale and cauliflower) tossed in a broccoli-based pesto sauce (also in recipe index). For lunch, dinner or a side. Vegan.

Fruit and Citrus Tea - caffeine-free herbal tea concentrate that you make on the stove top. Includes directions for brewing tea.

Galaxy Udon - a hot or cold udon noodle dish with vegetables in all the colors of the cosmos. Vegan.

Holiday Pasta - whole wheat pasta with cherry tomatoes, kale and mushrooms in a buttery balsamic sauce. Vegetarian.

Honey Balsamic Beans and Rice - a hearty cold salad or hot dish of various beans and brown rice with a sweet herb dressing. A personal favorite. Vegetarian.

Kabango Calmorant Smoothie - kale, banana, mango, carrots, almonds, currants - delicious, healthy smoothie for breakfast, dessert or a snack! Vegan.

Kale and Wild Rice Soup - kale, beans, mushrooms and wild rice combine with Indian spices in a hearty, filling winter soup. Vegan.

Kamut and Vegetable Stew - I give this little-known but delicious and healthy grain a starring role in this rich, gumbo-style stew. Easily made vegan by omitting or substituting the sausage.

Legume and Mushroom Stew - split peas, lentils, mushrooms and tomatoes star in this Indian-spiced stew. Vegan.

Little Bit o Everything Salad - a hearty meal-sized salad with a bit of every kind of nutrition you need: greens, veggies, fruit, beans and nuts. Goes well with any dressing. Vegan.

Masala Chai Concentrate - spiced masala chai concentrate, including directions for brewing caffeinated and non-caffeinated tea. Cooked in the slow cooker or on the stove top.

Masala Tofu Sandwiches with Sweet Curry Spread - tofu marinated in garam masala and baked until firm, piled onto your favorite bread with fresh vegetables and a delicious sweet curry spread that can also be used in many other ways. Vegan.

Orange and Blue Muffins - hearty, semi-healthy carrot and blueberry muffins. Vegetarian (contains honey - can substitute to be made vegan).


Orange Ginger Tofu Triangles - a Chinese-takeout inspired main dish of tofu marinated in orange juice, ginger and sesame, then baked to a firm perfection. Vegan.

Pear and Oatmeal Muffins - probably my favorite muffin recipe. Fresh pears and oatmeal make this hearty, filling and semi-healthy. Vegan.

Potato and Vegetable Green Curry - a hearty, coconutty bowl of classic Thai-style green curry loaded with potatoes, peppers, onions, broccoli and spinach. Vegan with minor adjustments.

Red Potato and Pesto Bake - red potatoes, red peppers, red onions, pesto and feta cheese make this dish a great choice for breakfast, lunch or dinner. Vegetarian - vegan without the cheese or with a substitute.

Sage Pork Loin - seared and baked pork loin rubbed with a delicious spice paste with fresh sage.


Spiced Wild Rice Bowl - wild rice, cauliflower, carrots and mushrooms with turmeric and cardamom. Great for a lunch, dinner or as a side. Vegan.

Squash and Spinach Pesto - A mildly flavored sauce that is a great way to use up a bounty of squash and zucchini. Vegan.

Slow Cooker Tomato Sauce - an Italian-style sauce you can throw into the slow cooker and let simmer all day. Vegan.

Stand-by Tomato Sauce - another classic Italian-style tomato sauce for pasta and wherever else you'd use tomato sauce. Thick, hearty and strongly flavored, this sauce is simmered for hours on the stove. Vegan.

Sweet Chili Noodles - Stir-fried noodles loaded with vegetables in a sweet and slightly spicy sauce. Vegan.

Tropical Smoothie - pears, pineapple and banana with delicious coconut milk. A good breakfast, snack or dessert. Vegan.

Whole Wheat Fruity Veggie Booya Muffins - muffins with everything under the sun - zucchini, carrots, oatmeal, banana, applesauce, walnuts, raisins and cacao (chocolate). Vegan.

Wild Hummus - walnuts, parsley, yogurt and apple cider vinegar are some of the 'odd' ingredients in a base of classic chickpea, tahini and lemon juice hummus. Vegetarian, easily made vegan.
